The design of the new bar of the Greek restaurant Olympia in Delft, questions the definition of a bar. It is a part of the general transformation of a typical Greek tavern into a postmodern restaurant with imaginative south cuisine. It includes the redesigning of the bar, the main entrance, modernising the menus, changing the restaurant's facade.
The alliance between the old and the new, the traditional and the modern, the history of a successful tavern and the evolution of the food culture creates a new meeting point based on the nostalgia of the traditional and the international style,  that defines it more as a image and flavour library - rather than a bar. The warmness of a friendly environment of this place, is expressed also by the materials that meet each other combined in different perspectives and colours bringing images or memories to each visitor of certain places or times.
Our methodology includes 4 specific elements:
- use of industrial materials (steel & wood)
- transformation (based on the existing form)
- views (design based on the two different entrances, the winter- main entrance and the summer-terrace entrance)
- creation of a modernised vintage atmosphere (re-used materials, collage - patch work, bringing back the brick as interior facade)
